layered yogurt flatbreads

For many years I’ve been fascinated by variations on yeast-free yogurt flatbread recipes (sometimes called yeast-free naan) that follow a loose formula of a cup of yogurt, a couple cups of flour, some salt, fat, and water. Sometimes there’s baking powder, sometimes there’s not. It’s kneaded together as you would a yeasted bread dough and left to rest for about 30 minutes, sometimes an hour, during which a transformation occurs and the dough becomes springy and smooth and very lovely to work with, like a freshly-opened can of Play-Doh. Once rolled thin, they’re pan-fried, and look, they’re fiiine. But they’re never as good as I want them to be.

Mortgage holidays: a break is tempting, but it will cost you

About 2m Britons have paused payments in the coronavirus crisis. Readers share their concerns

Almost one in five UK mortgage holders have now been granted a payment holiday, it was estimated this week – but people’s experiences of the process have been very different. Some struggled to get a holiday while others say it was almost too easy. And while for some it will add just a few pounds to their monthly mortgage bill, others say their outlay will rise by a lot more.

The Guardian asked readers who had applied for a mortgage payment holiday, or help with other debts, how they got on. Almost 200 people contacted us to tell us their stories.

How to support the best British nail brands | Sali Hughes

We can lend a shaky hand to the struggling salon sector as we file and paint during lockdown

Sales of nail polish are up 24% since lockdown began, mostly because no one can visit salons for the long-lasting UV-cured lacquers that dominate the modern industry but also, I’m convinced, because we suddenly have way more time and inclination to bother.

It may be one minuscule piece of good fortune in this crisis, but we can also lend a shaky hand to the struggling salon sector as we file and paint.

No posh bread, no fancy cheese and certainly no mayo: the seven unwritten rules of eating baked beans

From that initial cold forkful to just the right amount of cheese, we’ve settled it – this is how you should be enjoying your beans

Forget whether the dress was blue or white, or if there was room for Jack on that floating debris – the most heated debates of our generation revolve around food. Does the jam or cream go on a scone first (and how do you pronounce scone)? Does pineapple belong on a pizza? And should your Heinz ketchup be kept in the fridge? (For the record: jam then cream; rhyme it with “gone”; certainly not; and yes, definitely. Glad we cleared that up.)

But few foods have triggered so many lengthy debates as the satisfyingly saucy baked bean. A British icon, the fierce loyalty these delicious legumes stir up is unparalleled. Which is the best bread to put them on? Is it OK to eat them cold? And should they really be touching other food on the plate? We’re here to solve these saucy conundrums once and for all. (Please note: the editor’s decision is final.)

Poem of the month: Primavera by Robin Robertson

for Cait

The Brimstone is back
in the woken hills of Vallombrosa,
passing the word
from speedwell to violet
wood anemone to celandine.
I could walk to you now
with Spring just ahead of me,
north over flat ground
at two miles an hour,
the sap moving with me,
under the rising
grass of the field
like a dragged magnet,
the lights of the flowers
coming on in waves
as I walked with the budburst
and the flushing of trees.
If I started now,
I could bring you the Spring
for your birthday.

Biden's lead over Trump widens – but strain on his virtual campaign grows

Coronavirus has robbed the Democrat of his typical back-slapping approach as he faces growing scrutiny and a third-party challenge

The Tampa, Florida, rally for Joe Biden on Thursday evening began as it normally might have, before a once-in-a-century pandemic transformed all aspects of American life, including the presidential campaign. A local high school student recited the pledge of allegiance, a campaign organizer pleaded with supporters to volunteer and a local DJ spun R&B music between speakers.

But in a sign of how profoundly the coronavirus crisis has reshaped American politics, that was where the similarities ended.

Everton v Liverpool: 1986 FA Cup final – live!

Half-time advertising break.

And that’s the end of the first 45. Plenty of thinking to do for Kenny Dalglish, Bob Paisley and the rest of the Liverpool management team. Everton took a while to get going, but they eventually assumed control and have been much the better team since. Peter Reid, Kevin Ratcliffe and Gary Lineker have been the standout turns. They deserve their lead. Unless there’s a seismic shift in momentum, Everton will be drinking from the cup of redemption in about one hour’s time!

Irish support for Native American Covid-19 relief highlights historic bond

  • GoFundMe page for Navajo and Hopi aid lists many Irish names
  • Choctaw Nation sent donation in 1847 for potato famine victims

The list of recent donors reads like an Irish phone book. Aisling Ní Chuimín, Shane Ó Leary, Sean Gibbons, Kevin Boyle, Kevin Keane, Clare Quinn, Eamonn McDonald, on and on down a GoFundMe page that by Friday had raised $3.15m of a $5m goal.

The individual amounts are not remarkable – $10, $20, $30, some exceeding $100 – but the story behind the donations stretches back two centuries and encompasses a singular act of generosity that forged a bond between Native Americans and Ireland, a bond now renewed in the coronavirus era.

Global report: Trump says Covid-19 will 'go away without vaccine', expects US death toll to top 95,000

Mike Pence’s press secretary tests positive to coronavirus; China reports one new case; Russia reports 10,000 new cases for sixth day in a row

Donald Trump has said coronavirus will “go away without a vaccine” and is expecting 95,000 or more deaths in the US, as Mike Pence’s press secretary tested positive for coronavirus.

The president’s comments, at an event with Republican lawmakers, capped a horror week in the US, in which it was revealed unemployment had risen to 14.7%, up from 3.5% in February, with 20 million people losing their jobs in April.

it sucks being an artist in quarantine.

i'm apparently part of a band now? i mean none of us live close to each other but i'm making contributions to this group's songwriting and like i'm the only guitarist so,, i probably have to stay but it's stressful when you're trying to write your own songs for your own projects and then there's all this school stuff hanging over your head and it's like you're procrastinating on literally everything.
i'm painting my own killjoy mask. i got a party poison one but i'm doing one for myself too.might go crazy and cut the sleeves off a denim jacket i never wear and use all that fabric for patches for uh. crust punk jeans or something. maybe i'll learn to play in drop d tuning, maybe i'll go in the basement when people leave and teach myself a good ol fashioned screamo scream. learn to play the solo for demolition lovers and go nuts, do that song both guitar and singing. figure out how to use the multitracker thing i have and learn how to actually record stuff. i can't be "productive" by societal standards right now. i gotta create. i don't like how we live in a culture of guilt with that type of stuff. if art is supposed to come out of world crises there shouldn't be any shame in that.
