Method and apparatus for high intensity ultrasonic treatment of baking materials

The present invention discloses a high intensity ultrasonic treatment method and apparatus that is used in conjunction with an existing commercial dough or batter mixer to enhance the rheological, aeration and textural properties of the dough or batter. This change in properties is a result of the phenomenon of acoustic cavitation induced in the dough or batter by treatment with high intensity ultrasonic waves. The present invention discloses a mixing bowl (20) of an existing mixer system that is preloaded with dough or batter, the bowl (20) is located at the center of an ultrasonic bath tank (101) filled with a working fluid. The effect of ultra-sonic waves with power levels above 1 kW can be observed over the entire or partial mixing period of the dough or batter. The ultra-sonic waves of the present invention are generated by a plurality of ultrasonic wave generators (104A, 104B) and piezoelectric transducers (1) mounted on a stainless steel tank (101). The electrical energy received in each transducer (1) will be converted into appropriate mechanical expansion and contractions in the piezoelectric ceramics of the transducer (1) thus leading to pressure waves being transmitted to the dough or batter to be mixed. The generation and transmission of high intensity ultrasonic waves to the dough or batter affects its rheological, aeration and textural properties.

A device for cleaning trays comprises a tub that has a bottom and a wall. The tub is dimensioned such that a baking tray can be placed therein. The device further comprises a dish drain that can be placed in the tub. Said device for cleaning a baking tray uses only a small amount of space in a kitchen and is easy to handle. In fact, in a typical kitchen that already has a dish drain, the device requires no additional space.

A portable baking oven for a pizza or other food item includes a food item heating plate, a base having a heating chamber, and a top cover having a moisture vent and a heat reflector structure extending across the inside of said top cover. When placed on said base, the top cover forms a baking chamber above the heating plate. Heat produced in the base's heating chamber circulates up through air passageways in the base into the baking chamber above the food item heating plate. This circulated heat is reflected back down toward the food item heating plate by the top cover's heat reflecting structure to accelerate baking of the top of a food item placed on the heating plate. The top cover's moisture vent can be located above the heat reflector structure in the top cover, and openings can be provided in the heat reflector structure which allow moisture emitted by a food item being baked in the oven to pass through the reflector structure and out through the top cover moisture vent.

"The country's cake decorating industry has been witnessing drastic changes in the past few years. Home baking is a serious business now," says Farzana Gandhi, project and brand building consultant, Cakeology.

The second edition features artists like Alyson Reynolds (Scotland), Sachiko Windbiel (New York), Tina Scott Parashar (Dubai) and Bijay Thapa (New Delhi), who will hold 35 demos and six workshops for aspiring bakers.

In her six-hour hands-on workshop, which is open to beginners as well as professionals, Windbiel will show participants how to create cute 3D figurines and toppers using fondant. Three special cakes will be on display this year. UK-based cake sculpture expert Rose Macefield will be making a life-size bride and groom wedding cake. The second is a life-size elephant by Samie J Ramachandran, whose 500kg London Bridge cake got plenty of eyeballs at an exhibition in Bengaluru. For the last one, London-based bakers and best friends Valeri Valeriano and Christina Ong of the multi-award winning Queen of Hearts Couture Cakes will create an entire English garden using nothing but buttercream.

Speaking about her personal like, Shilpa tied the knot with Raj Kundra, with whom she was co-owner of the Indian Premier League (IPL) cricket team Rajasthan Royals on 22 November 2009. Shilpa gave birth to a son, Viaan Raj Kundra, on 21 May 2012. The duo is extremely active and loved on TikTok.
