The state health department officials confirmed 27 deaths in Maharashtra, which was the highest number reported in a single day and the state's count of cases climbed to 8,590. Civic officials said that of the four Mantralaya staffers, three tested positive on Sunday while one was confirmed on Monday. "They were on duty and include a sweeper and a driver. Contact tracing is underway and we will test the high-risk contacts," said a civic official. The official added that a portion of Mantralaya may be cordoned off if necessary. Guardian Minister Aslam Shaikh said that the staffers were taken to Kasturba Hospital for testing. Four more ward boys of the TB Hospital in Sewri tested positive on Sunday taking the total count of infected staff members to 14. "One of the ward boys had directly gone to Kasturba Hospital and was admitted with symptoms. He has been shifted to the ENT Hospital. Two others are Thane residents and had sore throats," said Dr Lalitkumar Anande, medical superintendent of the TB Hospital, adding that two of the ward boys have been kept in isolation at the staff quarters. No new cases in Mahim, DadarThe number of cases in Dharavi continued to rise with 13 new cases reported on Monday. Majority of the new patients were senior citizens taking the total count in the area to 288. Civic officials said that no new cases were reported from Dadar and Mahim for three consecutive days and while 17 patients were discharged from Dadar, nine were discharged from Mahim on Monday. The cumulative cases in Mumbai city are 5,776 while the total cumulative deaths here are 219. State health officials said that there were 522 new cases in Maharashtra, of which 369 were from Mumbai. Of the 27 deaths, 15 were from Mumbai, six in Amravati, four in Pune and one each in Jalgaon and Aurangabad. Among the deceased patients, 22 suffered from other ailments including diabetes and hypertension. our Coronavirus outbreak: Meet the man who sanitises the vehicles of our frontline warriors By www.mid-day.com Published On :: 28 Apr 2020 01:45:32 GMT Every day for over 10 days, a 39-year-old mechanic has been driving down to Mumbai from his house in Virar, to sanitise the vehicles of the police and the BMC. Vijay Kumar Babanna Rajappa runs a small garage opposite the Siddhivinayak temple at Prabhadevi. It has been closed since the lockdown, but Rajappa, who wanted to do something for our frontline warriors in the battle against COVID-19, has been helping them free of cost. So far he has sanitised over 150 vehicles. Rajappa has sanitised all the vehicles of police stations at Shivaji Park, Mahim, Dadar, Virar and Arnala. He was given a letter of appreciation from many police stations for this. "We gave a letter of appreciation to Rajappa for helping the police department by sanitising our vehicles including mobile vans, cars, beat Marshal's bikes etc. It protects us from this virus while traveling from one place to another place," said Sunayana Nate, inspector of Dadar police station. Virar corporator Maya Chaudhary said, "We took Rajappa's help to sanitise municipal emergency service vehicles, buses, police vehicles and auto rickshaws in Vasai-Virar. Rajappa is doing great work without charging for it. We have also asked him to sanitise vehicles used by doctors, nurses and ward officers." 'Keeping our police safe'"Every day the police deal with many people including accused and have to take them to police stations or courts. Currently these may include COVID-19 positive people. The accused touch many areas inside the vehicle. So I decided to clean their vehicles and keep all our police personnel safe from the danger. I also clean the bikes of beat Marshals. If their vehicles are safe, they are safe," said Rajappa. Rajappa even explained the process of cleaning the vehicles. At first he washes a vehicle with water from both inside and out. "Then I wash it with diesel and dry the entire vehicle. Then I use a litre of water mixed with sanitiser and apply it to the vehicle. It takes me an hour to completely clean a car. I use a sanitiser which is WHO and FDA-approved. It is only used on the metallic body of cars and bikes." 'Sanitisation helps'He added, "If a person who is infected by COVID-19 travels in the car, there are chances it can spread to others who use the vehicle. The air-conditioning can also increase chances of spreading this virus, but if we sanitise the vehicle, there are no chances of the virus spreading." He claimed after a vehicle is sanitised, it is safe for about 15 days. He now wants to approach hospitals to sanitise ambulances. Rajappa has been working as a mechanic since 1999. The usual charges for deep washing of vehicles are around R300-R500 each, but he has not been charging for the same. In the first phase of the relief operations, we have been able to cater to 20,000 persons (4000 packets) by providing them with dry rations and groceries. Cooked food to the slum dwellers, daily wage earners, migrant workers, street beggars, rag pickers and construction workers has crossed 1,00,000 (One Lakh) threshold. our Stop the rumour mill that fuels lynchings By www.mid-day.com Published On :: 30 Apr 2020 01:25:47 GMT On April 16, two priests and their young driver travelling in a car from Mumbai to Surat were lynched to death by a frenzied mob in Gadchinchale village, Palghar district. This paper has been closely following the sequence of events, including interviews with the family of the slain, and the political brouhaha that followed. While it is learnt that the men became the target of an enraged and armed mob, it is clear that they were fuelled by rumours and in some cases by alcohol too. Locals claim talk about child kidnappers and organ sellers was doing the rounds. There were also rumours about outsiders coming into the village and spreading Coronavirus. We now have to think and put into place some kind of gameplan, so that such incidents do not occur again. Having said that, it is also understood that there is no guarantee, and one acknowledges that it is very difficult to control a mob baying for blood. This does not mean that we cannot try and learn from some takeaways of this crime. Police and leaders must act proactively the next time any rumours start swirling around. This could be done by putting signboards in areas or making announcements to dispel rumours. The frontline of the tribal community and villagers, those who command respect could be roped in at an early stage by authorities as allies. They could then hold meetings of people dispelling and squashing dangerous, loose talk. An aggressive truth campaign can be started. Action against culprits stoking irresponsible fires can be part of the rebuff-the-rumour strategy. All this should be driven by those who have won the trust of the people. All easy to say, but worth giving a shot. The key seems to be not to be reactive and try to pacify an already charged, unmanageable group, but, proactive so that there is a strategy in place to scotch lies and wilful attempts to misguide. our Palghar lynching: 'Not the first mob attack in Gadchinchale village', claim sources By www.mid-day.com Published On :: 1 May 2020 01:47:06 GMT The police remand of the 101 accused arrested in the barbaric killing of two priests and their cab driver in Palghar district last month, was extended for another 14 days on Thursday in connection with the attack on police officers on April 16. They were produced before the Dahanu Magistrate court in the afternoon as their police remand expired on Thursday. Magistrate O B Kulkarni sent all the accused to additional police remand of 14 days. They have been charged with attempt to murder for attacking the cops while they were headed to the lynching site. Lawyers headed by advocate Parmanand Ojha appeared before the court on behalf of deceased Chikne Maharaj, 70, Sushil Giri, 35, and driver Nilesh Tilghate, 30. The police had on April 17 apprehended 110 people and arrested 101 of them, and sent them in police remand in connection with the murder of the three men. The nine other accused are juvenile and currently at Bhiwandi juvenile home. "Since the 14-day police remand ended on Thursday, I requested the court not to grant them bail instead send them into judicial custody," said Ojha. Police search for others involved in the lynching at Gadchinchale village. File pic The CID officials requested that the accused be sent to police remand for the murder attempt on cops and obstructing the work of police officials. None of the advocates appeared on behalf of the accused. Advocate Ojha alleged that the trio became victims of a huge conspiracy against them. "There was no rumour before the incident and the priests and the driver were well aware of the internal routes to Gujarat from Mumbai. But their vehicle was turned back at a check post bordering with Dadra and Nagar Haveli," he said. But crucial eye-witness Sonudaji Borsa told mid-day that a rumour of a child lifting gang was doing the rounds of the village. "Two nights before the incident, people gathered at our forest check post and forced me to step out saying a child lifting gang was active in the area. People often used to shout 'chor ayaa, chor ayaa' unnecessarily to trigger panic among villagers who would gather in large numbers," Borsa said. Not the first mob attack Sources said incidents of villagers creating unrest to raise their voice against government officials are very common here. "In December 1998, a mob in Gadchinchale village attacked forest officials and a State Reserve Police Force (SRPF) team acting against timber smugglers. Two men were caught but they screamed for help and a large number of villagers surrounded the forest officials and SRPF personnel," said an officer from Palghar police. The mob assaulted the officials and snatched the rifle of SRPF constable Vikram Valvi. One of the priests killed in the April 16 incident. File pic "Regional forest officer Digambar Manohar Dahibhavkar had registered an FIR against the mob at Kasa police station on December 22, 1998. Four people including Lohu Kanoja, Sonu Pilena, Tulja Pilena and Madu Kanoja were named in the FIR," said the officer. After the case was registered, all the villagers abandoned their homes just like they have done now. "The police later managed to arrest five absconders," said the officer. They also recovered the snatched rifle. "The four accused named in the FIR were arrested on August 9, 2012. Several accused are still at large," said the officer, adding that there have many such incidents that reveal the aggressive nature of Gadchinchale residents who have no fear of the law. "The villagers clearly say 'yaha mehnat karke khana milta hai aur jail me bina mehnat ka' (here, we have to work for food, but in jail it's for free)," said the officer. Their meeting lasted for around 20 minutes. The move comes at a time when the Election Commission of India (ECI) is scheduled to hold a meeting over elections to the Legislative Council in Maharashtra. The meeting is scheduled to begin at 9.30 am today. Every year, Governor and Chief Minister meet on Maharashtra Day in a traditional parade at Shivaji Park but this year the celebrations are curtailed due to COVID-19. So, the Chief Minister went to Raj Bhavan to call on the Governor, a CMO official said. Earlier, Governor Koshyari had requested the ECI for the election to nine seats of the Legislative Council in the state. The Governor has made the request in a letter to the Election Commission, to fill the 9 seats in the legislative council, that has been lying vacant from April 24, "with a view to ending the current uncertainty in the state." He has stated that the Central government has announced many relaxation measures regarding the enforcement of lockdown in the country. As such the elections to the council seats can be held with certain guidelines, said Koshyari. "Since Chief Minister of Maharashtra Uddhav Thackeray is not a member of either house of the State Legislature, he needs to get elected to the Council before May 27," he added. Earlier, Election Commission had withheld the election process for these 9 seats in view of the COVID-19 situation in the country. This came after Maharashtra Chief Minister Uddhav Thackeray on Wednesday called Prime Minister Narendra Modi about his nomination to the State Legislative Council. According to sources, Thackeray sought Prime Minister Modi's help, saying if it doesn't happen, he will have to resign. Prior to that, the Maharashtra Cabinet had on April 28 once again had asked Governor Koshyari to nominate Chief Minister Thackeray to the State Legislative Council. Before that on April 9, the state cabinet had recommended Thackeray's name for one of the two vacant MLC seats that were to be nominated by Koshyari to the Legislative Council to avoid a constitutional crisis. our 'We change our sleeping spots based on the tide', say Bandra Bandstand locals By www.mid-day.com Published On :: 2 May 2020 01:25:46 GMT Since the lockdown began, nearly 750 people staying in around 125 shanties at Bandra Bandstand, have spent every night sleeping on or near the rocks outside their houses until the tide comes in, forcing them to crowd back inside. On an average, there are eight members in a shanty at Ganesh Nagar, along the seashore. Unable to stay together in their small dwellings, they have been forced to spend time near or on the rocks by the sea, till the tide rises, in an attempt at social distancing. The people have been residing in the area since 1986 and have Aadhaar, ration and PAN cards etc. They have been getting SMS alerts to pay their electricity bills. They want the government to give them concessions regarding electricity, and many of the migrants there want to go back home to Bihar, Uttar Pradesh, etc. Until the tide comes in The secretary of Ganesh Nagar Rahiwasi Sangh, Jeetendra Pareva said, "There was no space crunch in these houses as the working members would be out for most of the day. But due to the lockdown, the dwellings are overcrowded. Now a few members sleep inside the house and others come out to sleep on the rocks. We do this at night and in the afternoon. We change our sleeping locations as per the high tide. The water reaches right upto our door steps during high tide. We have learnt to sleep according to it," said Pareva. Residents say only the men sleep outside on or near the rocks. Pics/Sameer Markande Most of the residents are people who work as gardeners, drivers, maids, etc in the nearby bungalows of film stars. However, they claim neither the film stars nor the government have come forward to help them till date. The locals also claim they have to defecate in the open as there is no public toilet facility in the area except for one meant for tourists, which is air-conditioned, and charges R10. "It becomes tough for us to answer nature's call during the rainy season, as the rocks become slippery and many people lose their balance and get hurt. Fortunately none of us have fallen into the sea and drowned. Many political leaders have promised us toilets but nothing has been done. Who will pay R10 to use an AC toilet when we don't have ACs even at home?" asked Pareva. Chose safety over money The residents claimed that they have stopped working due to the lockdown, but their employees in the bungalows have been trying their best to lure them back. "These people have been offering us huge sums of money to resume work. A few of us were tempted as the offers were lucrative. But we had a meeting. Re-girding of a bridge on the Churchgate-bound fast line in the Bandra-Mahim section, which would have otherwise required cancellation of at least 250 local train services, was completed within 14 hours on April 30. The steel bridge, which spans 9.15 metres and has seven cross-girders of length 5.8 metres is located on the Mithi River. The steel girders needed to be immediately replaced as they had got corroded. Speaking to mid-day, Western Railway chief spokesperson, Ravinder Bhakar, said, "Mumbai suburban is one of the busiest rail networks of the world and to carry out work of such magnitude is a daunting task. This work required complete shutdown of traffic for eight hours on three consecutive days, which would have resulted in cancellation of at least 250 suburban services and cancellation/delay of at least 60 passenger trains in the section." Sources said that the Railways decided to utilise the lockdown period and carry out the re-girding work by following all the social-distancing norms. Two cranes of 200 MT capacity, eight Farana cranes, 20 Hydra cranes and 18 excavators were deployed at the site. Apart from this, the work was carried out by 30-40 track maintainers and contractual labourers, and a dedicated team of supervisors and officials. All pre-block activity was completed on April 29 and the cranes were set up at the location. On April 30, work started from 9 am and the track part was completed by 8 pm. After that the overhead wires were fitted by 11.30 pm and the track was declared fit for train movement. There were 52 cases reported in 24 hours taking the number to 123. The number of containment zones has reached 33. But, a major cause for concern is that the cases reported are from the slum pockets of Mulund West. Mulund had comparatively kept the infection down till date. There were 71 patients reported in Mulund till date, of which 52 are under treatment. There were 28 containment zones declared till now, of which 18 are active. Authorities are on alert as Indira Nagar (19 cases), Ramgadh (15 cases) have slums. Rigorous testing and screening camps have been held in these areas. "We had conducted camps to trace more patients, we have now received positive reports of 52 people in one day," said Assistant Municipal Commissioner (T ward) Kishor Gandhi. According to T ward data, Amar Nagar found three new cases, Indira Nagar, 31 more cases and Ramgadh, 8 new cases in the last 24 hours. "The rising number in slum pockets is definitely worrisome, as they have narrow lanes and common toilets," said a health official on condition anonymity. Even though the lockdown has been extended till May 17, the number of containment zones in the city continues to be on the rise. Cops have been noticing violations in terms of people coming out for non-essential work and crowding at various places. Among the new cases are two APMC staffers, a police officer, a kidney patient, a homemaker and a BEST employee. The PMC, which falls under the Raigad district, was initially declared an orange zone, as was the entire Raigad district but within 24 hours, the collector put PMC areas in the red zone. Ramesh Lengarekar, Deputy Municipal Commissioner, PMC, informed mid-day that PMC was a part of Mumbai Metropolitan Region (MMR), like Thane, Navi Mumbai, Kalyan and Dombivli, etc, and considering the entire MMR is in the red zone, PMC, too, falls under the said category. "While the government has the power to decide the zones (red, orange, green), the collector has been empowered to list a zone from orange to red or green to orange." 12L population in PMCSo far, two deaths have been reported from the PMC region, which has a population of 12 lakh. The number of positive cases in Raigad district, excluding PMC, is lesser and is, therefore, in the orange zone. Areas under the PMC — Panvel, Kamothe, Kalamboli, Kharghar, Ulve and Taloja — will follow the national lockdown period till May 17 with prohibitory orders under Section 144 (no assembly of more than five people) in force. "As per the central government directives, we are making an attempt to keep some additional shops (five) other than medical and general stores open. A decision on this will be taken soon," a senior PMC official said. A thorough screening of every vehicle entering and exiting APMC should be done and at every entry point within the PMC area. This needs to be done to curtail any community outbreak of the virus," Kamble added. The four stations - Mumbai Central, Dadar (western), Bandra Terminus and Panvel are among the 215 stations across the country shortlisted by the Union Health Ministry, where rail isolation coaches will be parked as COVID-19 care centres in case COVID cases continue to rise in the city. These coaches will act as quarantine and isolation centres for city patients. A senior official confirmed the development and said considering the possibility of an increase in cases, railway coaches would be put to use. The Union Ministry of Health and Family Welfare chalked out a detailed list on Wednesday night. Elaborating further he said, separate coaches have been planned for suspected and confirmed patients to avoid cross-infection. "The special train coaches will be cleaned and disinfected as per protocol and handed over to the authorities. Later, officials will map at least one COVID dedicated hospital for each train so that the patient can be shifted in case of an emergency," he said. "Basic arrangements like ambulances etc for shifting the patient shall be made available by the state with paramedical staff. The train will be provided with watering arrangements, proper electricity connections and maintenance," he added. He said the contact number of local railway authority would be shared with the state where the train is stationed and wherever required, catering arrangements shall be made by IRCTC/ Commercial Department with Railway Protection Force (RPF) ensuring suitable security. Guidelines have also been issued for proper signage to be placed outside railway stations, platforms and near the location of coaches. She moved from deodorants to body mists and was finally looking to mature into a perfume user, when she found a scent with musky notes that she instantly liked. "The counter manager rushed to me, saying, 'But, ma'am, this is for men.' I think that's where it all started," she says about her fascination for unisex perfumes. Sudhir, an educator with DSB International School, now oscillates between the male fragrances put out by Body Shop, M&S and Titan Skinn. Pic/Getty Images A scent is considered unisex when it uses traditionally masculine notes like leather, smoke and wood, but is meant to be worn by both men and women. Historically, women's fragrances have carried floral or fruity notes. "I have often wondered why female perfumes are gentle and mellow, and almost always with a floral base," Sudhir, 32, says.The gender stereotyping of scents she is alluding to could in fact, be a product of marketing and not so much about preference. She speaks of the 30 gender-fluid scents that both, men and women have been seen to pick up. "For instance, the Aphtoori perfume combines notes of jasmine and cigar, and it is our fastest selling among women," she says. Nandan's friendship with designer Gaurav Gupta has propelled a collaboration that's now sealed in a bottle. Gupta launched AGAIN, his debut unisex scent last week, one with zero floral tones. "It [decision to launch a unisex scent] was a no brainer. I am gender-fluid by personality, and I don't see the world in slots. Gender divides are more to do with social conditioning." The just-launched fragrance, AGAIN Manan Gandhi, the head of Bombay Perfumery, a-young-but-talked-about fragrance house from the city, would agree. Musk is not only for men, he asserts. Chai Musk, one of his best performing perfumes, blends sandalwood, ginger, lemongrass and musk. Of the eight fragrances he currently offers, two are unisex. "Women are not particularly concerned about female-specific infusions. They look for natural ingredients, intensity and retention. They prefer a scent that lasts," Gandhi explains. Internationally, the unisex beauty concept raged in the 1990s when Calvin Klein launched CK One and Comme des Garçons introduced its eponymous fragrance. "It may be a talking point internationally, but in India, we have always patronised unisex scents. All attars are unisex, and India is one of its earliest manufacturers," he says of a tradition that dates back to the Mughal times. His store, A Hami Bros, on the chaotic Mohammad Ali Road, was established in 1939. The shelves don't hold "for men" and "for women" labelled bottles. Originally slated to start from Nice on June 27 and finish in Paris on July 19, there is no chance the event can go ahead as planned and organisers face a mammoth logistical task of rescheduling. So far, organisers ASO have remained silent, but several mayors of the French towns along the planned route say they have been consulted regarding the new dates. French President Emmanuel Macron said in a televised address Monday that a strict lockdown in France would continue until at least May 11, as public gatherings were banned until mid-July. Tour general director Christian Prudhomme has said riders will need two months after the lockdown ends to prepare for the race. France's Minister of the Interior Christophe Castaner said on Tuesday that ASO had to reschedule or cancel the Tour. "It is up to the organiser to analyse their ability to organise it and reschedule it," Castaner told French radio. A start in late July or mid-August has been mooted, with some reports suggesting the race could even be delayed until September. The race's route is over 3,000km long, with roughly 500,000 fans lining the roads each day. "Social distancing on the roadside wouldn't be a problem, but in the start towns, at the finish line and in the VIP tents it certainly would," Belgian virologist Marc Van Ranst told Flemish TV channel Sporza on Saturday. Suggestions the Tour could be held without supporters have been ruled out. "The Tour de France is 3000km of smiles," Prudhomme said regarding roadside gatherings. "We won't run a Tour de France without the fans." Between a rock and a hard place Macron's announcement may have caught the organisers short. A late July start for the Tour could be considered too close to the ban on large public gatherings, while the riders would also need to be in peak condition. ASO also organises the Criterium du Dauphine eight-day race, and had been hoping to run that ride through the Alps in late June or early July, but the traditional Tour warm-up has been postponed. A mid-August start would see the race finish in September, meaning a clash with the Vuelta a Espana. Caipiroska Ever since Agent Jack's outlets opened in Malad and Navi Mumbai, we've been curious to check out the bargain-happy bar. So, when they opened their newest outlet in Andheri, we headed there in a flash. Located on Veera Desai Road, the property is huge; the glass wall interiors lend the space an air of roominess. Even their smoking section is larger than other watering holes in the neighbourhood. Cycle motifs and signage make way across the decor almost everywhere — from the lights, serving dishes to the washbasin. We settle in at a table of our choice on a Sunday night and are ready to hit jackpot. Crispy Prawn App sarkarWe download the app and our attendant takes us through the ordering process. The app is glitch-free so far. The menu displays the lowest drinks price for the day, stock market-style, and the current bidding range. There's a big screen that displays your name and your bargain process. For old-school tipplers who find downloading an app tiresome, the bar takes regular orders too. We place our bid and within seconds an attendant confirms our order, completing the bump-free ride to VFM daaru. The bargain process is fun, as Agent Jack throws witty repartees at us when we place low bids (see pic above). We pick a Bloody Mary (Rs 270, all prices exclusive of taxes) and a Caipiroska (Rs 280). For some chow, we choose the Chicken Pesto Popper (Rs 250) and Jalapeno Salsa (Rs 225). Chicken Pesto Popper An offer he couldn't refuseThe service is quick; both dishes are hot, and arrive at our table in 10 minutes. But the food doesn't flatter. The Bloody Mary could do with stronger flavours, and the chicken dish borders on the 'hariyali kebab' variety. Had it been named differently, it would have made the cut since it tastes great. Agent Jack's Bar in Andheri The Jalapeno Salsa is more creamy fondue with bits of jalapeno; the toast on the side is the saving grace. Our next order, Crispy Prawns Wok fares better. The crisp coating reveals delicate flavours of prawn in a single bite, a definite bar nibble winner. By now, the prices are hitting rock bottom due to their popularity, with vodka and whiskey pegs costing as low as '50. The app continues to function fuss-free with our next set of orders. Our final food pick is Pizza Sicilia ('325) that's generous with toppings but the taste borders towards Indian 'sabji' style. Barring a few food hiccups, Agent Jack's stays true to its promise of offering a fun bargain. Having refrained from boozy binges whenever in the driver's seat, Jajal was familiar with the plight of non-drinkers, who often have little to woo them at bars. "I wanted to go beyond the regular fresh lime soda," he says. That the restaurant has been inspired by the highlights of regions across India, meant the drinks had to toe the line. In fact, he recently designed an elaborate mocktail menu for Kill Cafe at Seven Bungalow with over 20 options. "A lot of traditionally teetotaller communities like Marwaris and Jains have started frequenting bars. Hence, restaurant owners are feeling the need to invest in their non-alcoholic section," he says. Merani feels it's the holistic experience that counts. "People want a good ambience, great food and a drink worth their salt, whether alcoholic or not," he says. Pranav Mody, mixologist at Sassy Spoon, believes the trend has picked up in the last couple of years. "A lot of people who visit the restaurant don't prefer alcohol, either because they're teetotallers, are trying to go healthy," says Mody adding that the festivals season also witnesses a drop in demand for alcohol. The Sassy Spoon upped its mocktails menu during a revamp last year. "We felt mocktails offered a chance to experiment with fresh fruits and herbs that hold health properties," he says. In fact, one of their signature mocktails, the Berry Berry Khatta made of fresh mulberries muddled with oranges, grapes and kala khatta, inspired a cocktail. "We decided to spike it with some Absolut raspberry vodka, and the flavours blended beautifully." The inherent ability of alcohol to lend flavour to a drink has made many bartenders focus more on cocktails. "Alcohol has its own elements that bind flavours together. Mocktails, on the other hand, are notoriously known for having high sugar content," says Mody. He gives us the example of a Virgin Mojito and Caprioska, which are almost impossible to prepare without sugar. "I do get several requests from patrons for sugar-free variants of these drinks, but if I don't end up adding sugar, it'll taste extremely sour," he says. That's where fresh fruits and sugar replacements like honey and stevia count. While some restaurants may have upped their mocktail menus, it's still not up everybody's alley. Terttulia at Prabhadevi has refrained from having a mocktail section altogether. But as owner Imrun Sethi insists, his team entertains requests for mocktails. "Most of our cocktails can be made into mocktails. In fact, our bartenders are always customising drinks based on requests we receive. No mocktail has ever been a high seller even in the past and the current health wave doesn't help," he says. our Mumbai Food: Sample flavours from Indonesia at this Andheri pop-up By www.mid-day.com Published On :: 04 Sep 2017 09:00:06 GMT Ayam Goreng Kalasan with Sambal Kacang Last October, when Priyadarshini Gupta travelled for a three-week trip to Indonesia, she signed up for a day-long cooking class with a local chef in Yogyakarta, a culturally rich city on the island of Java. She learnt to identify native produce, whip up traditional Indonesian fare - including sambal, a hot sauce of Javanese origin - and even noted the substitutes for ingredients not available in Mumbai. "One example is tempeh [a traditional product made from fermented soy], which is cut into thin slices and fried till crisp and served as an accompaniment with many dishes. The chef suggested tapioca or potato slices for a similar crunch," says the 46-year-old corporate consultant. Priyadarshini Gupta at a cooking class in Indonesia This weekend, if you drop in at Gupta's Versova home, you'll find the crunchy potato slices accompanying two dishes - Soto Ayam and Gado Gado - that are part of The Indonesian Kitchen, a dinner pop-up presented by Commeat. While the home chef and former Masterchef India contestant has been hosting meals of regional cuisines like Bengali and Oriya for over a year, this will be her first international meal pop-up. Soto Ayam "The menu features dishes from across Indonesia," says Gupta. For instance, Gado Gado is a salad packed with steamed vegetables, prawns or chicken and the traditional dressing of sambal kacang, a cooked version of the condiment with a peanut base. It's a prominent feature on the menus of warungs, or mom-and-pop establishments that dot Indonesia. Meanwhile, Ayam Goreng Kalasan (fried chicken marinated in coconut milk), a starter, is a popular street snack across the Southeast Asian nation. The starters also include Pisang Goreng (fried bananas coated with rice flour) and Rempeyek Kacang, a snack that Gupta calls 'Indonesian mathri' since it's made in a manner similar to the Indian snack, but with peanuts and rice flour. Spicy Steamed Tofu The mains feature Soto Ayam, a one-bowl dish with poached chicken or prawns, flavoured with macadamia nuts, light soy and Balinese egg noodles, and Gule Kambing, an aromatic lamb curry laced with macadamia nuts and spices like cinnamon, galangal and lemongrass. If you're a vegetarian, try Soto Ayam with tofu and shiitake mushrooms, or opt for Sayur Nangka, a gravy dish starring jackfruit soaked in coconut milk. The menu includes Spicy Steamed Tofu, a baked tofu dish made with shiitake mushrooms. "This is a contemporary version. Traditionally, it is steamed in a banana leaf," she says. Longtong The accompaniments include Longtong (compressed and steamed rice cakes) and steamed rice. "While Thais use sticky rice, Indonesians prefer the long-grained jasmine rice. Indonesian cuisine also features tamarind, jaggery and nuts like almond and peanuts - all ground - in the gravies. They might sound similar to Indian dishes but their taste is distinct," says Gupta. To see the various other ways in which cacao can be consumed, sign up for a pop-up dinner organised by Danda Food Project, in collaboration with organic chocolate brand Mason & Co. Aditya Raghavan, cheese consultant and co-founder of Danda Food Project says, "The idea for this came about when Anandita [Kamani, co-founder] and I were discussing how astounding it is that we get beautiful dark chocolate from this plain-looking pod. We started doing some research, and that led us to Jane and Fabien Mason's Auroville set-up." The result is a 10-course meal that takes you on a journey of tasting everything from the cacao fruit to the decadent chocolate that comes out of it. Most of the menu is shrouded in secrecy, and will only be revealed to diners on the day. "We want people to be excited by it when they see it," explains Raghavan, adding that there will be options for vegetarians and vegans, too. Without revealing too much, he gives us a sneak peek into what we can expect. "The first course is a sorbet made with the pulp of the cacao fruit. We sourced close to 30kg of it from a farm in Kerala," says Raghavan, adding, "Very few people have actually tried the fruit. It tastes like a cross between a lychee and mangosteen." Another dish will make use of cocoa nibs, while a third will feature rich cacao butter. "For the sixth course, we have used 10-day aged molé [a savoury, chocolate-based sauce from Mexico] to create a dish," he shares. Six of the 10 courses are savoury items, after which the desserts will start coming in. There will be nine drink pairings through the meal. Six of these will feature wine, while Abhishek Chinchalkar of Bombay Duck Brewing (and third co-founder of Danda Food Project) will be serving a Chocolate Stout. "The tenth course is a digestif, featuring two items, Coffee as Chocolate, and Chocolate as Coffee. For this, we've played around with coffee beans and cold-brewed coffee to give you what looks like chocolate but tastes like coffee," says Raghavan. I have travelled around the globe and found, for example, that many countries have their own variations of our halwa. Halwa refers to many dense, thick and sweet confections across South, Central and West Asia, North Africa, the Horn of Africa, the Balkans, Central Europe, Malta and the Jewish world. Sesame halwa is popular in Balkan countries such as Poland and in the Middle East. In the Mediterranean region, sesame butter and tahini paste are the key ingredients, besides sugar or glucose. Eastern European countries like Belarus, Romania, Bosnia and Russia use sunflower seeds to make halwa. While touring Turkey extensively to research for my book On the Kebab Trail, I found that they too have a halwa like our candyfloss called floss halwa. Floss halwa is a traditional sweet, made by flossing thin strands of halwa into a light confection. Made primarily of wheat flour and sugar, the strands are continuously wrapped into a ball and then compressed. The result is a halwa with a light consistency. It is made in regular and pistachio flavours. The most popular form of halwa in Bahrain is a jelly-like sweet called halwa Bahraini, which is called rehash in Kuwait. In Egypt, halwa is a popular confection that is relatively inexpensive and comes in pistachio, chocolate and mixed nut flavours, though they are sesame seed based. Sesame halwa is a classic dessert in Greece and Cyprus. Halwa-halvardeh is the Iranian name for their tahini-based halwa, which includes whole pistachio nuts. Ardeh is processed sesame in the form of a paste, usually sweetened with sugar. Halwa made with flour, butter and sugar is spread on a plate in a thin layer and is often flavoured with rose water. Monish Gujral Halwa came to Russia from Central Asia. Halwa containing bars, cakes or waffles (with or without chocolate, nuts or seeds) are now widespread. Alva, as halwa is called in Serbia, is common to the whole region and popular at local church fairs around the country. Xalwo, a staple of Somalian cuisine, is a popular confection served during special occasions, such as Eid and wedding receptions. It is made with sugar, cornstarch, powdered cardamom and nutmeg, clarified butter and some local flavours, to enhance taste. Aluva is served at the traditional Sri Lankan New Year in April. This halwa is generally made with rice flour and sugar. Cashew nuts are often added for taste. In Tajikistan and Uzbekistan, the traditional name for halwa is lavz. Soft sesame halwa is made with sugar syrup, egg whites and sesame seeds. Solid sesame halwa is made with pulled sugar, which is stretched, till it is white coloured. Sesame is added to warm sugar and spread on large trays. As a child, I would get up early in the morning to go to Chandni Chowk’s Gurdwara Sis Ganj Sahib with my grandmother. I would wait for the halwa after it had been offered as prasad. I would tell my granny to get at least 5–6 portions. How I relished that taste! Halwa is often cooked at home. There are many variations—sooji (semolina), whole wheat, gram flour (besan), besides carrot, raw papaya, pumpkin, fig and surprise, surprise, even egg. The standard recipe for semolina halwa is referred to as ‘1:2:3:4’ as it comprises one unit of oil, two of semolina, three of sugar andfour of water. In my opinion, carrot halwa is the ultimate Indian dessert, or should I say the king of Indian desserts. There could be nothing more perfect than a bowl of warm carrot halwa on a cold winter day. The chewy, caramelised carrots, slow-cooked in an open pan for almost an hour are a heavenly treat in themselves. Gajar HalwaIngredients (for 6 servings)12 tender, juicy red carrots3 tbsp + 2 tbsp ghee25 cashew nuts, chopped3 cups full cream milk1/3rd cup condensed milk2 tbsp seedless raisins5–6 green cardamom pods, crushed6–7 saffron strands1/3rd cup sugarTo decorate3 silver leaves MethodScrub the carrots well.Trim both ends and scrap off the outer skin.Grate the carrots.Put 3 tbsp of ghee in a heavy-based wok over moderate heat.Fry the cashew nuts, till light gold.Remove and drain on kitchen paper to absorb excess fat.Add the grated carrots and cook, stirring all the while, for 25 minutes.Pour in the milk and condensed milk and cook over moderate heat, stirring occasionally till the mixture thickens and the milk is fully absorbed.Add the sugar, mix well and stir for another 10 minutes, till the halwa thickens again.Mix in the remaining ingredients, including the ghee and fried cashew nuts.Cook for 5-10 minutes, till the halwa leaves the sides of the pan.Transfer to a serving dish, decorate with silver leaves and serve hot.Excerpted from On The Dessert Trail: Around the World in Eighty Desserts by Monish Gujral, Penguin Random House India Full Article

Pic/Nimesh Dave We are quite chuffed with the thought of ordering sushi for lunch on a busy day in the newsroom. Sushi and More, a delivery-only enterprise, has been fulfilling Japanese sushi cravings for residents of SoBo and Prabhadevi since 2009, and has now launched in Andheri. The menu for the suburbs is a slimmer version of the original, but it doesn’t disappoint (there are Jain options as well). They offer nigiri, uramaki and hosomaki style rolls in addition to a few appetisers such as Chicken Yakitori and Rock Corn Tempura. We pick three sushi options, Veg California Roll (Rs 400, eight pieces), Crazy Salmon Roll (Rs 950, eight pieces) and Crabmeat Gunkan (RS 400, six pieces). They cover Andheri to Juhu via direct orders, so we get a partner delivery company to deliver to Bandra East and as a result, are unable to test their delivery time. But they earn full marks for packaging. The pieces sit firmly in boxes with transparent covers. Separate sections for gari and wasabi (and a pair of wooden chopsticks) ensure that they don’t meddle with the mild flavours of the dishes. We dig into the Veg California Roll first, as the avocado it comes stuffed with has already turned brown. We feel the rice could be of a better variety. The roll is a downer, with no standout flavours to savour. Next, we try Crabmeat Gunkan, our favourite from the list. The delicate flavour of the meat goes well with the sticky rice it comes topped on, unlike the California Roll, where the rice tasted flat. The Crazy Salmon Roll has fish on the outside and the inside. The amount of meat is worth the money, but the spicy salmon in the centre doesn’t taste very different. Sushi and More is priced well compared to other restaurants offering the fare, but slight creases need to be ironed out for a silken smooth sushi experience. Mumbaikar Lloyd Rodrigues will conduct the session where he will teach participants how to make four East Indian dishes. The first is the Mutton Stew, which is a combination of vegetables like carrots, peas, onions and tomatoes, and mutton blended with mild spices. The second item on the menu, shares Rodrigues, is the East Indian Potato Chops, a much-loved snack featuring crumb-coated potato mash stuffed with spiced minced meat. "The third is a rice dish, which is colloquially referred to as Wedding Rice, since it is usually prepared as part of the East Indian wedding spread," informs Khan. But for those who have access, they are spending their quarantine by watching web-series, films, and reruns of classic television shows. So on one hand, we have Ramayan and Mahabharat, on the other spectrum lies something called Four More Shots Please, Season 2! This show is what we call the ultimate triumph of a woman's liberation. Their tendency to do all the possible shenanigans and be unabashed and unapologetic about it is what has made this web-series so catchy and contagious. And one of the leads, Sayani Gupta, a fine actor to the hoot, recently in an interview with Radio City's RJ Harshil, she talked about the show's popularly, how she has been spending time at home, and a lot of other entertaining stuff. As expected, the first question was about the number of interviews she has given about the show amid this lockdown. She sounds perplexed and says, "I have really lost track, so many, it's insane you know. I give at least 1 or 2 interviews every day. But I have now started my own live videos that is a series of my interactions with some of my friends from the industry, it's called Shy-Me-Not. I've had four sessions so far." The next question is about her journey from FTII (The Film and Television Institute of India) to films and she takes a deep breath since the answer is going to be really long. She says, "I am from Kolkata and went to Delhi for college and did theatre. I wanted to go to the National School of Drama but decided against it because my seniors, M.K Raina and Habib Tanvir, told me how it was going through a turmoil in terms of syllabus and management. But going to FTII was one of the best decisions of my life, I spent three-and-a-half years over there. It's because of the institute that I'm sitting for this interview today." She added, "I knew nobody would spot me at a cafe and cast me for a film, and I knew this process would take time but I actually got my first film in the first month of being in Bombay, Second Marriage Dot Com. The director had seen my short film that was made during my education at the FTII. I don't like the world struggle, I feel the journey has been very interesting. I also did a travel show that was once in a lifetime experience, I also assisted Manav Kaul on a film that's going to come out soon." She also spoke about her character Khanum from Shonali Bose's Margarita With A Straw and said, "To get such a character is a once in a lifetime opportunity, for both Kalki and me. Such films aren't made too often. It was a very performance-heavy part, she was blind and an activist. There was so much to do, and of course, she was homosexual. There was so much scope for performance. I'm happy people took me seriously." We have seen Gupta in a lot of films over the last few years like Fan, Jolly LLB 2, Jagga Jasoos, and Article 15, so how has she been balancing between this medium and the OTT platform! This is what she has to say, "In these last three years, I have been shooting every day and I've actually done two shifts, three shifts. I have done Inside Edge 1 & 2, Four More Shots 1 & 2, a British series called The Good Karma Hospital that's out now, but I've also done nine films," and she flashes her smile! Talking about her character Rohini from Inside Edge, she says, "I don't know anything about cricket, I have seen the sport with my parents. My father was working for All India Radio and his office was right next to the Eden Garden. But I was never aware of the technicalities of cricket and neither was I interested." She continued, "Karan Anshuman told me about this even before Excel was producing it. After a few months, the creative producer of Excel called me and said they have a fabulous role, come and meet us. When I read the part, I asked them if they were sure they wanted me to play this, but I guess all of them were confident about me as an actor for some reason and I'm really grateful to them." And then it was time to talk about her character Damini Rizvi Roy from Four More Shots Please, and her initial reaction on reading it. "I hate the word bold and the context in which you are using it is wrong because even according to the dictionary, it's the boldness of mind. People really misinterpret things by using the term bold. Four More Shots was a very important show when I read it for the first time, and I felt it was amazing that a group of women was trying to make a show which actually was about women. It was trying to normalise everything about the life of a woman. I think it's one of those very important shows, and it's crucial to have such a show in the mainstream narrative, and even the criticism that comes and mostly from men about our sex and smoking, you can understand how regressive, repressed and patriarchal our society is even now." She added, "When men do all these things and we all have seen it, nobody bats an eyelid, and everyone is like,'Oh my god! Friendship'! The moment it's about women that have chosen to live a particular life and are normal with it, like I am, people tend to have issues. There are lots of topics that are being handled with a lot of sensitivity and depth in the second season. You have workplace gender bias, you have body shaming, you have LGBT rights, you have a homosexual wedding, freedom of expression, freedom of speech. It has everything a woman faces in the urban space or rural space. We are getting long letters and messages, it's crazy." She continued, "It's moving people because it is making a difference to them." In between, she answers a fan who asks if a woman having sex with multiple men is empowerment for her. She says, "No, it's not, and nobody is saying drinking and smoking is empowerment. But people do go out and drink and smoking is not even shown in the entire season two. Women who go out and drink and choose to have sex with whom they want to, and have control over their sexuality, should be not looked at as a taboo. It's normal, we all do it!" "Also, you have to realise it's about celebrating yourself and women for their rights, it's about subverting these constant pressures of women. The problem is that women are always shown as these crazy stereotypes, either she's virginal and the hero is trying to woo her and have sex with her, the hero is marrying her, or a vamp who's breaking the hero and heroine's home. Nowhere are women, in most of the mainstream narratives, shown as themselves. What is the problem with having sex with multiple partners? So many people do." She seems to be raising the right points and makes a very important observation. "Sex was always shown as something done to women and never a choice that women are making. If I want to be intimate with someone or be in a romantic liaison with someone, it's my choice. That needs to be respected and celebrated. Having said that, our intention is never to encourage smoking and drinking or go out and partying, that's not the point. But if there are people who do it, there shouldn't be a taboo about it, even in India. You see Sex in the City, you see Girls, you see Friends, any Hollywood series or show or film and it's fine, but the moment you see Indian girls doing it, you're like, 'OMG'! "Everyone does it so what's the problem in showing it or representing it authentically! It's a show made by women, it was the need of the hour to represent women authentically," she added. An official statement had to be issued on behalf of the actor at around 1am on Wednesday to quash all such extreme rumours. "It's really disappointing to know that there are extreme assumptions being made about Irrfan's health. While we are truly appreciative that people are concerned, it's disheartening to see some sources spread extreme rumours and creating panic. Irrfan is a strong person and is still fighting the battle. We really request you to not fall for rumours and not partake in these conversations which are fictional. We have always actively clarified and shared updates on his health and we will continue doing so," said the statement, issued on behalf of Irrfan by his spokesperson. The 53-year-old actor had been admitted to Mumbai's Kokilaben Dhirubhai Ambani hospital with a colon infection and was in the intensive care unit (ICU), as reported by IANS in an earlier report on Tuesday. "Yes it is true that Irrfan Khan is admitted to ICU at Kokilaben in Mumbai because of a colon infection. We would keep everyone updated. He is under doctor's observation. His strength and courage have helped him battle and fight so far and we are sure with his tremendous willpower and prayers of all his well wishers, he will recover soon," said the earlier report issued on behalf of Irrfan by his spokesperson. The actor has been ailing ever since he was diagnosed with neuroendocrine tumour a while back, and has been under medical attention for the same. Irrfan is currently mourning the loss of his mother. The actor's mother Saeeda Begum breathed her last on Saturday in Jaipur where she used to stay. However, owing to the ongoing lockdown, the actor could not physically attend his mother's last rites and reportedly paid his last respect through video conferencing. On the work front, Irrfan Khan was last seen in "Angrezi Medium", last-released Bollywood film before COVID-19 forced complete shutdown of cinema halls.
